Eggspectation’s Incredible Garlic Shrimp with Crispy Fried Fingerling Potatoes & Broccolini Recipe

INGREDIENTS

  1. Shrimp (6 ea) 
  2. Mediterranean Oil (1 oz) 
  3. Ginger, fresh, minced (1 tsp) 
  4. Green onions, thinly sliced (1 Tbls)
  5. Garlic, chopped (1 tsp) 
  6. Clam Juice Marinara (2 oz) 
  7. S&P Mix (¼ tsp) 
  8. Butter, unsalted (1 oz) 
  9. Lemon, Wedge (1 ea) 
  10. Blanch Broccolini – prep (4 oz) 
  11. Fingerling Potatoes – prep (4 oz) 
  12. S&P Mix (¼ tsp) 
  13. Butter, melted (1 oz) 
  14. Parmesan Cheese, grated (1 Tbls) 
  15. Parsley, finely chopped (1 tsp) 
  16. Lemon gremolata (1 tsp)

DIRECTIONS:

  1. In a cast iron pan on low heat combine the Shrimp, Mediterranean Oil, ginger, green onions, garlic, clam juice marinara, S&P mix, butter, and lemon wedge juice and wedge. 
  2. Cook on low heat with a cover for 5-6 minutes or until shrimp are cooked. The point is to cook them slowly. 
  3. While the shrimp are cooking drop the fingerling potatoes in the fryer for 5 minutes. 
  4. When there is two minutes left on the timer drop the broccolini into the boiling water.  
  5. When the timer goes off for the fingerling potatoes remove them from the fryer and toss them in a mixing bowl with S&P mix, butter, parsley and Parmesan cheese. 
  6. Then remove the broccolini from the boiling water and make sure they are seasoned with salt and pepper.
