Eggspectation’s Incredible Garlic Shrimp with Crispy Fried Fingerling Potatoes & Broccolini Recipe

INGREDIENTS
- Shrimp (6 ea)
- Mediterranean Oil (1 oz)
- Ginger, fresh, minced (1 tsp)
- Green onions, thinly sliced (1 Tbls)
- Garlic, chopped (1 tsp)
- Clam Juice Marinara (2 oz)
- S&P Mix (¼ tsp)
- Butter, unsalted (1 oz)
- Lemon, Wedge (1 ea)
- Blanch Broccolini – prep (4 oz)
- Fingerling Potatoes – prep (4 oz)
- S&P Mix (¼ tsp)
- Butter, melted (1 oz)
- Parmesan Cheese, grated (1 Tbls)
- Parsley, finely chopped (1 tsp)
- Lemon gremolata (1 tsp)
DIRECTIONS:
- In a cast iron pan on low heat combine the Shrimp, Mediterranean Oil, ginger, green onions, garlic, clam juice marinara, S&P mix, butter, and lemon wedge juice and wedge.
- Cook on low heat with a cover for 5-6 minutes or until shrimp are cooked. The point is to cook them slowly.
- While the shrimp are cooking drop the fingerling potatoes in the fryer for 5 minutes.
- When there is two minutes left on the timer drop the broccolini into the boiling water.
- When the timer goes off for the fingerling potatoes remove them from the fryer and toss them in a mixing bowl with S&P mix, butter, parsley and Parmesan cheese.
- Then remove the broccolini from the boiling water and make sure they are seasoned with salt and pepper.
